One of Australia's most celebrated chefs, Christine Manfield, recently tutored aspiring home cooks at Sydney Seafood School earlier this month.
On the menu was Hiramasa and Ocean Trout Tiradito; known as Nikkei cuisine, it's a South American hybrid of Peruvian and Japanese flavours and textures.
Creighton Ward was on hand to see Christine's tutorial in action before 40 guests moved into the Sydney Seafood School's state-of-the-art kitchen to replicate the tiradito for themselves.
